Salmon with Blue Cheese

Ingredients

Instructions

  1. Brine the fish in a 9% salt solution (1T salt in 1C water) for 10 minutes to reduce albumin exudation. Rinse off the brining solution and pat the fish dry.
  2. Wrap the salmon, red onion, blue cheese, salt and pepper in a parchment paper pouch.
  3. Roast at 250 for 7 minutes.
  4. Remove from the parchment paper, plate and serve.
